Zucchini soup

I tried out this healthy soup over the weekend and it was really yummy. My 2yr daughter loved it and it was ready in a jiffy.

  • 1 tomato
  • 1/2 onion
  • 1/2 carrot
  • 1 zucchini 
  • Salt to taste
Process-> Chop the vegetables in cubes. Add little water and pressure cook for 2 whistles. Blend all the cooked vegetables in a thick  smooth puree with salt. This way you are avoiding using cornstarch. Garnish with coriander leaves and serve hot.

Note-If you don't have a zucchini you can add doodhi (1/4).
