Spinach Sambhar

Sambhar is very famous all over the world. I remember as children we had this tamilian family residing in the vicinity of my house and once a year for some festival they would give sambhar rice and it would be yummy. A bigs thanks to my friends from Tampa who taught how to make sambhar. Because of them I realised that sambhar can be made with any kinds of vegetables like spinach, brinjal,  capsicum, bhindi, doodhi etc.

Ingredients
  • 1/2 cup toor dal
  • 1 1/2 cup chopped spinach leaves
  • 1/2 medium tomato
  • 2 cloves garlic
  • 1 dried red chilli
  • Curry leaves
  • Tamarind paste
  • MTR sambhar powder
  • Turmeric
  • Hing
  • Mustard seeds
  • Jeera
  • 1/2 spoon sugar
  • Salt
  • Oil 
Process->In a pressure cooker take washed toor dal, tomatoes and spinach. Add water, hing and turmeric and cook it giving 3-4 whistles. Once the dal has cooked beat the dal with a spoon. In a pot add oil when heated add jeera, curry leaves, mustard seeds, and garlic cloves and saute it. Add the red chilli and tomatoes and cook it. Pour the cooked dal in the tadka and add the sambhar powder, tamarind paste, salt and sugar as per taste and let it boil. Garnish it with corriander leaves. Drizzle some ghee on the hot sambhar rices.
