Vegetarian Bhurji

Egg bhurji is a common popular street food near railway stations in India. But vegetarians need not miss out on it. Paneer is a very good substitute for egg. Serve with bread slices or pao and it can be meal by itself. 

Ingredients
  • 1 cup paneer
  • 1 medium onion diced
  • 1/2 medium tomato diced
  • 1/2 spoon grated ginger
  • Red chillli powder
  • 1/2 spoon chicken masala 
  • Corriander leaves
  • Salt
  • Turmeric
  • Curry leaves
  • Oil
Process->Add oil to a hot non-stick pan. Once it heats up add onions and curry leaves and saute it 2-3 minutes. Add the tomatoes, ginger, turmeric, red chilli powder and chicken masala and saute it. Place a lid on pan cook till the tomatoes get mushy. Now add the paneer and salt as per taste. Mix it properly add the corriander leaves and cook it for about 4-5 minutes. Serve it with bread slices.
