Onion Rice

I had gone for a vacation recently on a cruise. The chef had made this easy onion flavored rice. This rice can be served with dal or gravy or just eaten plain. It is similar to jeera rice but the onion is fried separately in little oil and mixed with the cooked rice. The mildly flavored rice with the golden brown onion slices and aroma of the ghee......u mouth would have definitely started watering by now. 

Ingredients
  • 1 cup rice
  • 2 pinches jeera
  • 2 bay leaves
  • 3 pepper corns
  • 4 cloves
  • 1" cinnamon
  • 3/4 cup sliced red onion
  • Ghee/Butter
  • 2 spoon oil
  • Salt

Process->In a sauce pan add to 1 spoon ghee in that add jeera, bay leaves, pepper corns, cloves and cinnamon and let it splutter. Next add the washed rice and salt. Roast the rice in the whole spices for 2-3 minutes. Add two cups of boiling water and cook the rice as usual. In the meantime in a small frying pan add 2 spoons oil. As the oil heats in that add the sliced onion. Cook the onion on a medium high flame till it is golden brown. Add the golden brown onion on the cooked rice and toss it. 


Note->Red onion add nice color and taste to the rice.
