Tomato Rice

Tomato is well known for its rich color and tangy taste. I had learnt to make this tomato rice from my brother when I was India. The tomato rice has a very nice color due to the tomatoes and red chilli powder and it definately makes your mouth water once you start making. It is a perfect option for lunch box as it tastes good even if it cold and leaves a tingling sensation on your tongue.

Ingredients
  • 2 1/2 cup tomato puree
  • 1 medium onion sliced
  • 1/2 peas
  • 1 cup basmati rice
  • 4-5 bay leaves
  • 5-6 pepper corns
  • 3-4 cloves
  • 1 masala elaichi
  • 3-4 pieces cinnamon
  • Turmeric
  • Red chilli powder
  • Salt
  • 1 spoon butter
  • Oil
  • Corriander leaves
Process->In a pot take little oil and heat it. Then add the whole garam masalas and let it splutter. Once it splutters add the onions and saute it for 2-3 minutes. The onions should cook tender. Next add the tomato puree, peas, turmeric and red chilli powder and cook the puree on a medium flame. The tomato puree should be cooked it less than half. Finally add the rice, butter and salt. Mix it properly with the tomato puree and saute it 3-4 minutes. Add water to the rice and cook it. Just adjust the taste of salt and red chilli powder if necessary. Turn off the flame once the rice cooks. Garnish it with corriander leaves.
