Panch phoran typically means five spices combined together in equal proportion and added as tadka. Fenugreek, jeera, mustard seeds, fennel seeds and nigella seeds(onion seeds) gives a nice aroma and flavour to this fry. To make the panch phoran take equal proportion of the five spices and keep it in a jar.
Ingredients
- 2 cups cauliflower florets
- 1 medium potato diced
- 1 spoon panch phoran
- 3 green chillies
- 1 small onion sliced
- Turmeric
- Hing
- Salt
- Curry leaves
- Oil
- Corriander leaves
Process->In a thick bottom pan take 2-3 spoon oil. Add the curry leaves, sliced green chilllies, hing, turmeric, onion and toss it for 2-3 minutes. Add 1 spoon of panch phoran and let it splutter. First add the cauliflower and cook it for 10 minutes they are half cooked. Then add potato and sprinkle salt as per taste and toss it. Turn off the flame once the cauliflower and potato have cooked tender. Sprinkle corriander leaves and serve with chapati.
