Bitter gourd fry

Bitter gourd is not everyone's favorite vegetable. But once in a while it's ok to eat a bitter vegetable than always the spicy and oily food. I remember my mom saying always bitter gourd helps in curing blood impurities. Back then I never believed it but I have decided to give it a try.

Ingredients
  • 2 bitter gourds
  • 2 spoons oil
  • Salt
  • Hing
  • 1 spoon sugar 
  • Turmeric
  • Red chilli powder





Process->Slice the bitter gourds in thin rings add salt and keep it aside for 30-45 minutes. The bitterness of the gourd will slight reduces. After 45 minutes squeeze out all the excess water from the gourd. Take oil in non-stick pan and when hot add turmeric and hing. Then add the gourd and sprinkle red chilli powder and  salt as per taste. Cook the bitter gourd on a slow flame. Try to make the gourd crispy. When it is crispy sprinkle the sugar and mix it properly. The sugar will melt and form a caramel layer on the bitter gourd. Serve it with cool curd rice.
