Yam Cutlet

I have a 2yr old daughter and she being a picky eater I am trying out new recipes. I was having this frozen yam cubes packet lying in my freezer didn't know what to do with it. So one Friday evening I decided to make cutlets. I was not sure about how it would taste. But it was a real hit and it turned out to be like a guessing game about what vegetable was added in it.

Ingredients
  • 1 frozen yam packet
  • 1/2 beetroot
  • 2 bread slices
  • 1 small onion diced
  • 1 spoon ginger garlic paste
  • Green chilli paste
  • Coriander leaves
  • Italian seasoned bread crumbs 
  • 1 spoon ketchup
  • 1 spoon vinegar
  • Salt
  • Oil for shallow fry
Process->Pressure cook the yam and beetroot and mash it properly. Heat 1 spoon of oil in a pan and add onion and cook it till becomes tender. In that add green chilli and ginger garlic paste and cook it. Now add the mashed beetroot and yam and salt to taste. In it add coriander leaves, ketchup and the vinegar give it a final stir and keep it aside for cooling. Once it has cooled down soak the bread in water and mix it. Make small cutlets and roll it in bread crumbs and shallow fry it on a medium flame till the covers becomes little crispy. Serve it with ketchup or green chutney.
