Cabbage fry

As children my mom would make this cabbage stir fry for our lunch box. It tastes yummy. The tomato gives a slight tangy taste to the cabbage and the chana dal is just cooked right. It's surprising how the simplest of curries are the most flavorful. Serve with chapati and raita as a simple healthy meal.

Ingredients
  • 1 small cabbage 
  • 2 spoons chana dal
  • 1 medium tomato
  • Curry leaves
  • Jeera 
  • Mustard seeds
  • Hing
  • Oil
  • Red chilli powder
  • Turmeric
  • Salt
  • Corriander leaves
Process->Soak the chana dal in water for 30-45 mins. Slice the cabbage in long thin strips. Add oil to a hot non stick pan. As the oil gets heated add all the tadka item jeera, mustard seeds, hing and curry leaves and let it splutter. Then add red chilli powder, turmeric and the tomatoes. Cook the tomatoes till they become pulpy and add the chana dal. Fry it for a minute of so and add the cabbage and salt and cook. Do not place a lid on it. Stir it continuously every couple of minutes. Once the water from the cabbage evaporates switch of the gas. Garnish it with corriander leaves.
