Zucchini pasta stir fry

I prefer cooking that is easy and tasty. I realized very late in life that eating healthy is very important to maintain a healthy mind and body. Better late than never. This was one of my experiments that I tried out one day for lunch and then on I am hooked on to it....that is Zucchini pasta stir fry. Its a one dish meal. 

  • 1 big zucchini diced
  • 1 small onion sliced
  • 3 spoons sun dried tomatoes
  • Multicolored veggie pasta
  • 2 garlic pods sliced
  • 1/2 spoon dried oregano
  • Salt
  • Red chilli flakes
  • Parmesan cheese
Process->Keep the pasta for boiling a vessel. As the sun dried tomatoes have oil in it there is no need to add oil for the cooking the zucchini. In the non tick pan add the sun dried tomatoes in that add the garlic and onions and toss it. As the onions cook slightly tender add the zucchini. Sprinkle salt, chilli flakes, oregano and cook the zucchini for 5 mins on a high flame. Finally add the pasta in the zucchini and toss it. Serve it ina plate and add some parmesan cheese on top. Enjoy it hot.
