Cabbage Salad

No thali is complete without raita or koshimbir. Raita or koshimbir were mainly introduced as it has lot of fibers and it is a good accompaniment with spicy curries. Furthermore raw veggies are better than cooked vegetables. There can be various kinds of koshimbirs. Cabbage koshimbir is one of my favourites. Someday if you don't have a curry you can eat cabbage koshimbir with chapati or enjoy it like a salad. Enjoy it like a diet food.

Ingredients
  • 1 1/2 cup cabbage
  • 1/2 cup tomato diced
  • Corriander leaves
  • 2-3 spoons lime juice
  • Salt 
  • Sugar 
  • Green chillies
  • Jeera
  • Mustard seeds
  • Oil 
  • Hing
  • Curry leaves
Process->Slice the cabbage in long thin strips. Mix the diced tomatoes, cabbage, salt, sugar, corriander leaves and lime juice. It should be sweet and tangy. In a small non stick pan add one spoon oil and let it heat. Add mustard seeds, jeera, curry leaves, hing, sliced green chillies and turmeric and saute it for 1-2 mins. Switch of the gas and let the tadka cool slitghtly. When the tadka cools down add it to the cabbage tomato mixture. Adjust the taste of salt, sugar and lime as per your taste.
