Carrot Pickle

I was having this lemon pickle masala lying around in the fridge for many days. I had heard and read that you can make instant vegetable but was not sure how it would taste. So today I finally gave it a try. This pickle can have a shell life of 4-5 days if kept in fridge in a air tight container. You can serve this pickle with paratha or curd rice. 

  • 2 Carrots
  • Lemon Juice
  • Salt
  • Pickle Masala
  • Jeera
  • Mustard Seeds
  • Curry leaves
  • Hing 
  • Oil 

Process->Cut the carrot in thin strips around 1"long. In a bowl take the carrots add lemon juice, pickle masala and salt as per taste. Take oil in a small kadhai add mustard seeds, jeera, curry leaves and hing and let it splutter. Pour the oil on the carrots and mix it properly. Keep the pickle aside of 4-5 hrs so that the carrot will get absorb the taste of salt, lemon juice and pickle masala.
