This was one the the trials which turned out a hit. Instead of the store bought pickles you can make this instant pickle at home. You need long green chillies which you can buy in the Indian store. These green chillies are not spicy so when you add mango pickle masala it goes well. By cooking the pickle in the microwave the green chillies will soak the spices, lemon juice, salt and oil flavor.
- 8-10 long green chilies
- 3 spoons mango pickle masala
- Lemon Juice
- Mustard seeds
- Curry leaves
Process->Slice the green chillies from the center and cut in half. In a glass bowl take the green chillies, 2 spoons mango pickle masala, lemon juice and salt and mix it properly. Take 2 spoons oil in a kadhai add mustard seeds, jeera, curry leaves, hing and turmeric and let it splutter. Add the tadka oil to the green chilies and mix it. Microwave the green chilli pickle for 3-4 minutes stirring after every 30-40 secs. The green chillies should cook tender.
