Cauliflower Potato Rice

Sunday evening after a hectic day of grocery shopping and household cleaning dinner is generally a quick fix. Cauliflower potato rice is one such option. The tomato puree gives a tangy taste to the rice. It is a perfect lunch box meal for children and adults. 


Ingredients
  • 1 cup basmati rice
  • 1 1/2 cup cauliflower
  • 1 medium potato diced
  • 1/3 cup peas
  • 1 medium onion sliced
  • 2 1/2 cups tomato puree
  • 2 spoons grated ginger
  • Whole garam masala
  • Everest Biryani powder
  • Red chilli powder
  • Turmeric
  • Salt
  • Butter
  • Oil  
Process->In a non-stick pan add 3-4 spoons of oil. As the oil gets heated in that add the whole garam masala  and saute it. Next add the onion and cook for 2-3 minutes. Add the tomato puree, ginger, biryani powder, turmeric, salt and red chilli powder. Cook the tomato puree till it is less than half. Saute the vegetables in the tomato puree for 2-3 minutes. Finally add the rice, butter and salt and toss it with the vegetables. Pour 2 cups of hot water and cook the rice. Serve with papad and raita.
