Aloo baingan curry

Whenever we go grocery shopping it a must for us to buy brinjals. Be it baby brinjals, big brinjal for bharta or the chinese eggplant. This time I got small long green color baby brinjals. Had not planned how to make it. And I just started adding the ingredients in the blender. Was not sure how it would be. But after I ate it was good ....only the salt was less. But thats ok...You can try out the same masala for chicken also.

Ingredients
  • 8 long baby brinjals
  • 1 potato sliced
  • 1 medium onion
  • 1/2 medium tomato
  • 2 cloves garlic
  • 1 inch ginger
  • 4 pepper corns
  • 1 green elaichi
  • 3 bay leaves
  • Red chilli powder
  • Kanda lasun masala
  • Salt
  • Turmeric
  • Jeera
  • Corriander leaves
  • Oil 
  • Curry leaves
  • Hot water
Process->In the blender make a smooth paste of onions, tomatoes, garlic, ginger, pepper corns, elaichi and  bay leaves.Add little water if necessary. Take oil in a non stick pan. When hot add curry leaves and jeera and let it splutter. Add red chilli powder and kanda lasun masala and quickly add the masala paste. Cook the paste on a medium flame till the raw smell is gone and water evaporates. As the masala leaves oil add turmeric and vegetables and toss it. Add 1 cup of hot water and salt as per taste and cook on a medium flame. Once cooked garnish it with corriander leaves and serve it with chapati or rice.
