Peanut cucumber raita

No meal is complete without yogurt is any form. Cucumber raita a is very popular accompaniment with pulao or biryani. In Marathi we call raita as koshimbir. This koshimbir is very different as it has peanuts in it.The peanuts add a crunch to the soft cucumber. Enjoy it with chapati then there is no need of curry also. 

  • 1/2 finely diced cucumber
  • 1/2 cup yogurt
  • 1 handful peanut 
  • 1 green chilli
  • 1 spoon corriander leaves
  • Salt 
  • Sugar
Process->Roast the peanuts in them microwave till they are crisp and some brown spots appear on them. Make a coarse powder in the blender. Finely dice the cucumber and add yogurt and green chillies. Adjust the taste of salt and sugar depending upon the sourness of the yogurt. Sprinkle the coarse peanut powder and corriander leaves and mix it.
