Diet stir fry rice

The diet stir fry rice is perfect when you are craving for fried rice and still conscious about your diet. It's loaded with vegetables so you are eating lot of fiber. And you are eating very little rice. It's 10 minute dish and serves two. You don't have to waste your precious weekend time cooking.

Ingredients

  • 1/2 cup rice
  • 1/2 capsicum cubed
  • 1/2 medium sliced onion
  • 1/2 cup sliced green beans 
  • 1/2 cup corn
  • 3/4 cup peas
  • Green chillies
  • 3 spoons soy sauce
  • Salt
  • Oil 

Process->Cook the white rice in a pot. Take oil in a non stick pan. In that add green chillies and onion and stir it for 2 minutes. We do not have to cook the vegetables they should be crunchy.In the pan add all the remaining vegetables and stir it for 3-4 minutes on a high flame. Sprinkle soy sauce and salt. Mix the rice and give it a final stir and serve hot.

Note->For frozen vegetables you will require 5 mins.
