Garlic Baingan Bharta

Garlic baingan bharta is my husbands specialty. He likes to cook once in a while and I also want a break and want to eat somebody else hand cooked food. Brinjal  when roasted on a flame or charcoal gets a nice burnt aroma and flavour and that's why it is different from other curries. You will not get the same feeling when you bake or cook in the microwave. Garlic they say is good to control cholestrol and this recipe I have one whole bunch of garlic.

Ingredients
  • 1 big brinjal roasted
  • 1 whole garlic 
  • 1" ginger piece
  • Green chillies
  • 1 medium tomato
  • 1 1/2 medium onions diced
  • Salt 
  • Curry leaves
  • Turmeric
  • Jeera
  • Hing
  • Oil 
  • Corrinader leaves
Process->Bake or roast the brinjal as per your choice. In a blender make a paste of green chillies, ginger, tomato and 1 onion. Cook the brinjal soft. Add some oil to a heated pan add jeera, curry leaves, hing, turmeric and toss it. Add the masala paste and fry it in oil for 5-10 minutes on a medium flame. As the masala is cooking remove the skin of the brinjal and mash it and add to the masala paste and sprinkle salt as per taste. Slow cook the baingan bharta on a slow flame for 15-20 minutes. Add the corriander leaves and mix it properly in the bharta. Mix the remaining 1/2 diced onion in the baingan. The raw onions will give a crunch to the baingan bharta. Serve the baingan bharta with roti or naan.
