Rajma Cauliflower Masala

Was surfing on the internet for different options for cauliflower curry. Instead of  peas, potato, capsicum, paneer, brinjal etc I came across this cauliflower rajma curry. It looked interesting and so today's dinner menu was cauliflower rajma masala. The tomato onion puree can be made in bulk and frozen. As it is cooked in oil it does not spoil and you can add for any vegetable

Ingredients
  • 3/4 cup cooked kidney beans
  • 2 cups cauliflower
  • 2 tomatoes sliced
  • 1 medium onion sliced
  • 2 green chillies
  • 3-4 garlic pods
  • Kanda lasun masala
  • Salt
  • Turmeric
  • Oil
  • Hing
  • Jeera
  • Curry leaves
  • Corriander leaves
  • Lemon juice
Process->In a small pan add 2 spoons oil and heat it. Add the onions and saute for 3-4 minutes on a medium flame. Then add tomatoes, green chillies, turmeric, kanda lasun masala and salt. Put a lid on the pan and cook it on a medium flame till the tomatoes and onions are well cooked. Turn off the flame and cool it. In the blender make a smooth paste of the onions and tomatoes. In a hot sauce pan add 1 spoon oil add jeera, hing, curry leaves and let it splutter. Add the masala paste and cook it on a medium flame for 5-6 minutes. Add the cauliflower and kidney beans and saute it for 2-3 minutes. Add hot water to the curry and salt. Cook the cauliflower on a medium flame. Sprinkle some lemon juice and corriander leaves and serve with chapati or rice.
