Simple Brinjal Gravy


This brinjal gravy is the easiest to make and it goes well with rice or chapati. Instead of making a masala paste add the bay leaves, pepper corns, cinnamon  and cloves in whole. The whole garam masala gives a very nice aroma and light flavour to the gravy. Some different taste than garam masala powder.

Ingredients

  • 5 baby brinjals
  • 1 small potato diced
  • 1 medium onion diced
  • 1 small tomato diced
  • 1 bay leaf
  • 3 pepper corns
  • 1" Cinnamon
  • 2 pinches jeera
  • 2 cloves
  • 2 garlic pods
  • Curry leaves
  • Kanda lasun masala
  • 1/4 spoon dhaniya jeera powder
  • Turmeric
  • Salt
  • Oil
  • Corriander leaves
Process->In a pan oil once it gets heated up. Add the jeera, curry leaves, bay leaf, pepper corns, cinnamon, garlic pods and saute it. Add the onions and toamto and stir fry till it is well cooked. Once cooked add turmeric, kanda lasun masala, dhaniya jeera powder, brinjal, potato and salt and toss it 2-3 minutes. Add 1 cup of hot water and salt as per taste and cook the brinjal tender. As the brinjal cooks tender turn off the flame and sprinkle corriander leaves.
