Onion Tomato Bhindi

I had gone for a birthday and the menu was Indian food. I liked the bhindi fry that they had made. The food was ordered from outside so definately I could not get the recipe. But this my version of the bhindi bhaaji. Definately worth trying. 


Ingredients
  • 3 cups sliced bhindi
  • 1 medium onion
  • 1 small tomato
  • 2-3 bay leaves
  • 2" cinnamon 
  • 3-4 garlic pods
  • 1 spoon grated ginger
  • Jeera
  • Red chilli powder
  • Turmeric
  • 1 spoon dhaniya jeera powder
  • Salt
  • Oil 
Process->Slice the onion and tomato and smash the garlic pods. In a non-stick skillet add 3 spoons oil. As the oil starts heating in that add jeera, onion, bay leaves, cinnamon sticks and toss it for 2-3 minutes on a medium flame. Next add garlic, ginger and tomato and cook it. Sprinkle red chilli powder, dhaniya jeera powder, turmeric and saute  with onions and tomato. Finally add bhindi and sprinkle salt. Cook the bhindi on a slow medium flame. It takes around 30 minutes. Once the bhindi is well cooked and dry turn off the flame.
