Green baingan

  • 7 baby brinjals
  • 3 spoon grated coconut
  • Red Chilli powder
  • 2 garlic pods
  • 1" ginger piece
  • 7-8 stems corriander leaves
  • 2" cinnamon stick
  • 2 bay leaves
  • Curry leaves
  • Jeera
  • Hing
  • Turmeric 
  • Salt
  • Oil
Process-> In the blender make a fine paste of coconut, chilli powder, garlic, ginger and corriander leaves.  In a pressure pan add 2 spoons oil. As the oil heats in that add jeera, curry leaves, hing, bay leaves, cinnamon sticks and turmeric. Pour the masala as the spices starts spluttering. Cook the masala on a medium flame till the excess water evaporates and the masala starts oozing oil. Finally add the brinjals and toss it. Sprinkle salt and add 3/4 cup of water. Pressure cook the baingan giving it one whistle.
