Potato Bhindi Fry

Bhindi or okra or lady's finger is favourite vegetable for people of all age. There are very few people who don't like bhindi. It is said that orka is cleans your stomach so you should regularly eat it. Potato bhindi fry is a easy recipe and it goes well with chapati or rice. Just slow cook the fry without putting the lid on.

Ingredients
  • 2 cups sliced bhindi

  • 2 medium potato 
  • 1 medium onion sliced
  • 4-5 garlic pods
  • 3-4 greeen chillies
  • 1/2 spoon dhaniya powder
  • Curry leaves
  • Jeera
  • Hing
  • Turmeric
  • Salt
  • Oil
Process->In a non-stick skillet pour 2-3 spoon oil. Add jeera, hing, curry leaves, garlic and green chillies and saute it. Next add the onions, turmeric and salt and for 2-3 minutes. Once the onions have cooked tender next add bhindi and dhaniya powder and half cook it. Finally add the potato and adjust the salt and cook it. Do not place a lid on the pan. Turn off the flame once the potato and bhindi are well cooked.
