Ridge Gourd Fry

Ridge gourd or dodka is a very common Indian vegetable. You can either make a gravy or fry. Ridge gourd chutney is also very popular and goes well with idli or rice. The ridge gourd chana dal fry goes well with chapati or rice.

Ingredients

  • 1 ridge gourd
  • 1/2 cup diced onion
  • 2 spoon chana dal
  • Red chilli powder
  • Salt
  • Corriander leaves
  • Turmeric 
  • Jeera
  • Curry leaves
  • Hing
  • Oil
Process->Soak the chana dal for 30 minutes in water. Peel the skin of the ridge gourd and dice it. Add 2 spoons oil to a heated pan. Next add jeera, curry leaves, hing, turmeric and onions. Saute the onions till they are translucent. Sprinkle red chilli powder, salt and saute it. Now add ridge gourd and chana dal in the masala. Put a lid on the pan and cook it. The chana dal and ridge gourd  should be well done but not mushy. Garnish it with corriander leaves once it is cooked.

Note->You can add 1 spoon finely grated wet coconut also.
